STRAWBERRY TART
Base:
2 cups of spelt flour
1 cup of coconut sugar
1 teaspoon baking powder
1 egg or egg replacer
100gms of butter
Filling:
750gms of strawberries
1 cup of coconut sugar
1/4 cup of maple syrup
3 tablespoons of corn flour
2 tablespoon of vanilla extract
Pinch of himalayan salt
Pinch of cinnamon
To make the dough:
In a large bowl add add in flour, sugar, baking powder and butter, whisk together and then use your fingers to pinch butter to form pea size crumbles. Add in the egg and continue to mix until the dough forms.
Press 2/3 of the dough in to a pie dish with your fingers.
To make the filling:
In a large bowl add the strawberries that have been washed and completely dried and cut in half. Then add the sugar, maple syrup, corn flour, vanilla extract, pinch of salt and cinnamon and mix together to pour over the dough.
With the remaining dough, pinch crumbles over the filling. Bake in the oven for 35-40 minutes on 200 degrees Celsius. Dough should be golden and bubbly. Let it cool completely before serving with vanilla ice cream or topped with desiccated coconut.
