Refined sugar free banana bread

Ingredients:

50g coconut butter / oil
50g rolled oats
300g wholemeal or spelt flour
100g crushed walnuts
2teaspoon baking powder
70g coconut sugar
70g maple syrup
8 dates cut in to small pieces
4 very ripe bananas
5 tablespoon coconut milk
1 chia seeds / flax egg

The most deliciously moist, healthy, refined sugar free banana bread! My absolute favourite and definitely a crowd pleaser. Freezer friendly and can easily be made in to muffins for lunch boxes.

Directions:

Mix/blend all ingredients together. Place in a bread tin/glass container (oiled) bake in the oven for 30 minutes on 180 degrees Celsius and then bake for 15-20 minutes on 200 degrees Celsius.

Check if the banana bread is cooked through thoroughly by inserting a skewer in the middle. It should be dry but still gluggy and the top should be darker and glossy.

Let it cool down before cutting up.
