Chocolate CAKE (refined sugar free)

Ingredients:

2 cups of spelt flour
1 cup of cacao powder
1/4 cup of coconut butter
1 tablespoon of baking powder
2 chia eggs (or eggs)
3/4 cup of dark chocolate buttons (organic times) or crushed refined sugar free chocolate
1 cup of maple syrup

1/4 cup of coconut sugar
2 teaspoon of vanilla essence 1 cup of coconut milk

That clean chocolate cake you’ve always been waiting for... honestly it’s too good to not make often. It’s dairy, egg and refined sugar free. All organic and can easily be made gluten free. I’ve used spelt flour as I find it more gentle on mine and my little ones tummy.

Directions:

In a large bowl, add in all the ingredients starting from most dry to wet. Mix it all together for a few minutes making sure it’s all mixed through.

Mixture should be a little thicker than pancake mixture. Not too runny.

Transfer to a baking tin coated with coconut oil or add baking paper. Put in the oven starting on low heat, 160 for 20 minutes bump it up to 180-200 for 10-15 minutes until ready. Should have a brownie like texture.

For icing, in a bowl mix 1/4 cup coconut sugar, 1/4 cup cacao powder, dash of maple syrup and a dash or two of coconut milk, whip it together and pour it over the cake/slice.

Enjoy 5-6 slices alone and hide from the rest of your family members.
