Immunity soup

Ingredients:

2 cups of broccoli
2 cups of spinach
1 cup of green peas
1 cup of cauliflower
1 onion
3 garlic cloves
4 cups of vegetable stock
1 teaspoon of salt & pepper
1 teaspoon of olive oil

The perfect flu fighter / immunity kick soup. Broccoli, spinach & pea loaded with garlic and homemade stock. This green goodness won’t disappoint!

Directions:

Finely chop the broccoli, spinach, onion, cauliflower and garlic. In a pan add olive oil and the chopped vegetables, stir and sauté for a few minutes, then add in the peas, salt & pepper and cook for 5 minutes until vegetables have slightest softened.

Pour in 4 cups of vegetable stock and let the soup simmer for 30 minutes before blending for a smoother finish.

Enjoy with a squeeze of lemon!
