Leek and Potato Soup

Ingredients:

3 leeks
3 yukon gold potatoes
oil and salt/pepper or seasoning of choice like thyme

Directions:

Cut up potatoes and leeks in slices and toss in olive oil for 3-5 minutes then add 3 cups of water and let it simmer for 15-20 minutes. Add in salt, pepper or your voice of seasoning like herbamare or stock. Stir through and let it cook for another 5-10 minutes.

Either by hand stick or mixer blitz the soup until super creamy and clear.

Serve with garlic toast or garlic croutons.
