Silverbeet Rice
Ingredients:
1 diced onion
1 teaspoon minced garlic
1 tablespoon olive oil
1 whole bunch of silverbeet chopped up
1 cup of basmati rice
2 teaspoon herbamare or salt
Directions:
Firstly sauté your onions in oil until soft and golden, then add your minced garlic and rice for a few minutes. Add in your silverbeet and 1/2 cup of water and let it simmer for 5 minutes, followed by 1.5cups of water or stock.
Let your rice cook 10-15 minutes or until it’s soft and ready. You can have it with some lemon squeezed on top or some people like it get traditional way with yogurt- but being dairy free and predominantly plant based / vegan we love it without any yogurt.
