10 Veg slice

Ingredients:

1 garlic clove
1 white onion
1 broccoli head
1 carrot
1 zucchini
1 cup of spinach
1 cup of silverbeet
1 cup of mushrooms
2 tablespoons of corn kernels
2 celery stalks
1 tablespoon of nutritional yeast
1 tablespoon of sesame seeds
1 teaspoon of dried basil
1 teaspoon of pepper
2 teaspoons of salt
A bunch of fresh parsley and dill
2 cups of spelt flour (any flour will do)
2 teaspoons of baking powder
1 tablespoon of olive oil
1/4 cup of oat milk
1 flax egg / chia egg (1 tablespoon flaxseeds / chia seeds to 3 tablespoons of filtered water)

Mix all vegetables and fresh herbs in a food processor / Thermomix and blend for a few seconds until veggies are chopped /grated finely but not too smooth.

Transfer to a glass mixing bowl and add in the salt, pepper, dried basil, olive oil, sesame seeds, flour and oat milk. Give it a good mix. Slowly sift in your flour and baking powder. Mix it all again thoroughly and transfer to your choice of pan / tray. Grease your pan / tray with oil or use parchment paper. Sprinkle with extra sesame seeds and blackseed.

Put it in the oven on 160 degrees Celsius for 20 minutes and then 200 degrees Celsius for 15-20minutes depending on your oven. The vegetable slice should feel soft and not too dry.

Once ready, take it out of the oven and let it sit / cool down for 10 minutes before cutting it up.
These delicious slices freeze really well. I’ve frozen some and kept some in a glass container in the fridge. When you want to re-heat- heat it in an oven.
