Chia Pudding

Chia puddings make a great pre dawn (suhoor) meal. You can keep it light and have it just on its own, topped with fruits and nuts or mixed with oats or granola and bananas. Your options are endless and it tastes so good. It’s got a deliciously sweet chocolate flavour from the cacao and a hint of coconut. Here’s the recipe:

Ingredients:

1 1/2 cup coconut milk or cream
1/2 cup of chia seeds
1/4 cup cacao powder
2 tbsp of maple syrup
1 tsp vanilla extract or essence

Directions:

Mix all the ingredients in a bowl or overnight jar (leave room in the jar / container for pudding to expand and thicken). Once thoroughly mixed through and creamy put a lid on and refrigerate overnight or a minimum of 6 hours.

I’ve topped my chia pudding with desiccated coconut, strawberries and pistachios.
You can add whatever you like..
