Coconut Banana Choc Chip muffins

Ingredients:

1.5 cups spelt flour
1/2 cup desiccated coconut
4 ripe bananas
4-5 dates
1/4 cup coconut sugar
1-2 tablespoons honey / maple syrup
1/4 cup of refined sugar free crushed dark chocolate (PICO) or chocolate chips / buttons of choice
1 chia or flax egg ( 1 tbsp chia seeds go 3 tsp water, mix and wait 10 minutes to form in to an “egg” like texture)
1/2 cup of coconut milk
1 teaspoon of baking soda
1 tablespoon of apple cider vinegar
1 tablespoon of coconut oil

Directions:

Mix all ingredients wet & dry in a bowl and then transfer in to blender / Thermomix until purée like. Let it sit for 10-15 minutes. Pour batter in to cupcake paper liners or a well-oiled cupcake tray. Sprinkle extra chocolate chips / crushed chocolate on top.

Bake on 150 degrees Celsius for 15 minutes and then 180 degrees Celsius for 15-20 depending on your oven.

Muffins should be soft and spongey but not gluggy.
